Corn Salsa with Salmon

Simplicity itself. Fresh corn - grilled - or use frozen and fry in a little bit of oil. (Fresh is infinitely better, but often not available.) Add halved cherry tomatoes. A little olive oil, a drizzle of balsamic vinegar, salt, pepper and some roughly torn basil. And, to finish it all off, a good crumble of salty feta cheese. Divine! We had it with grilled salmon - but good with anything.

Mmm looks fabulous. I love salsa because you can literally throw it together from whatever you have on hand!
