Soup time

palsternackssoppa

I'm having my last wisdom tooth pulled today (pulled, well, more of an operation really) and I expect there'll be lots of soup forthcoming. This particular one is another one that I taste-tested for a future cookbook by Lisa, and it's parsnip boiled with creamed coconut, then blended. It's flavored with lime (my addition, I felt it needed a bit of a kick) and then topped with a mix of fried bacon and ginger. Delicous!

Anne - parsnip & coconut soup sounds really interesting, I'd love to try that combination!
It must have been fun to test/taste all those recipes for Lisa Förare Winbladhs!?

Lovely picture as always!

Actually, the taste is much better without lime in my opinon. Even though I usually love a little (even a lot) acid in my food it does not work here. It spoils the subtle balance. You only need lime when using inferior coconut milk (which is ubiquitous in Sweden).
I tested with/without lime on ten people and all agreed.
Try to get Savoy coconut milk and see if you still feel the same. It is aworld of difference.
Big hugs to you and thanks for helping!

good luck at the dentist! At least you won't risk the place catching fire ;). That must have been one in a lifetime thing.

The recipe testing was great -- both a challenge and great fun to do stuff you'd probably wouldn't do on your own.

Lisa, the coconut cream I used could definitely have been the culprit! I tried to find Savoy, but no luck there - I'll keep looking though, because we really did like the flavor combination. Husband vas extremely sceptical but wolfed his bowl down. :)

Jessika - thank you. I'm back now, no fire, and I was at a big hospital, in an actual operation room instead of a small office. Felt safe. Woozy now. :)

Hi Anne, hope you are feeling better and having lots of ice-cream for the tooth and for the soal :)
The soup looks great and i would love to try and preper it. Is there any chance to get the recipe in English?

Many thanks in advance.

anonymous - sorry, as the recipe is still work in progress and the book isn't published, I won't share it in detail here. When the book is out, I'll ask Lisa if it's ok.

Everyone - thank you! The operation was ok, and I'm not in too much pain. Ice helps, and hey, ice-cream helps too :)

Sounds delicious. I'm always wondering what to do with parsnips. I'll have to give this a go.

Glad the wisdom tooth removal went well! I need to get 4 removed... Yikes!

Looks creamy yummy! Your pics of food all look very good too. I like how your blog does searches for recipes. Very cool idea.

Shelly - ouch! Although I must say, it's not that bad. Sure, there are many horror stories, but if all goes well, it's ok. My jaw is a bit tender, and I hope it won't swell more - I have a big wedding to attend on Saturday!

Lisa, thank you :) I'm really looking forward to the book - trying the recipes was a real teaser!

That's a seriously interesting combination of flavours. I agree that some sort of kick would be needed - the coconut and parsnip together might be just too sweet.
