Carrot salad with ginger & mint

Untitled

A fun, small side dish. The combination is pretty strong, and I imagine not everyone might like it, but we did!

Carrot Salad with Ginger & Mint
serves 2

2 carrots, thinly sliced
1/2 lemon, juiced
1 tsp olive oil
1/2 tsp sambal oelek
1 tsp grated ginger
Ten (or so) mint leaves, finely shredded
Pinch of salt
1 tbsp shelled, unsalted pistachios

Whisk lemon juice, olive oil, sambal oelek and ginger. Toss with the carrots. Fold in mint leaves, salt and pistachios.

We seem to be putting sambel oelek on everything lately: BBQ sauce, chicken wing sauce, bloody Marys, etc. Will try the salad, and now am thinking I need to add sambel oelek to glazed carrots as well. Thanks Anne!

Det låter precis som min smak! Älskar ingefära, citron och mint! Det här kanske jag ska prova redan idag!

I was not aware about such a wonderful idea of carrot. I think some other combinations are also possible now. I will do a try with other indian food recipes and few vegetables.

Jag gör en liknande, men använder Santa Marias Lime och mint-krydda, olivolja och crema di balsamico. Jättegott!
