Peppermint Bark

A repeat. Yes. But truly, one that's worth it. If you haven't discovered this amazingly easy candy by now, it's about time. If you don't like mint witch chocolate, get creative and mix in anything! In fact, if you've got any particular good combinations, leave a comment and tell me about them - I'd love to try some new ones!

Peppermint Bark

200 g dark chocolate
200 g white chocolate
Mint essence - a few drops
100 g crushed peppermint candies (I used Polkagrisar, "Polka-Pigs". Use candy canes if you've got them.)

Melt the dark chocolate in a waterbath or in the microwave. Stir in a few drops of peppermint essence. Pour into a form or tray, and let it set. When it's solid, melt the white chocolate in a waterbath or in the microwave. Stir in a few drops of peppermint essence, and all of the candy. Spread this over the dark chocolate. Let it set. Break into suitable pieces, keep in the fridge.

Why - chocolate and orange, of course!
Uhmma..extra dark coffee-flavoured chocolate and bailey's?
Extra dark chocolate and cranberries.
Dark chocolate and bananas...or pears...
I suppose you can replace the candies with other flavoury bits, like small orange zests or bits of caramel..
(I know, I'm posting a lot these days, but I always do that when uni exams get nearer :D)

Last year I made a bark of white chocolate and crushed root beer candies. It did taste like a root beer float, but the colour was really unattractive. If I did this again, I might tint it just so it didn't look like something the dog threw-up.

I think something like Turkisk peppar or salta döskallar would be nice. A long time a go Fazer had a chocolate bar with hard salty liquorice bits and I miss it! Marabou has ha new bar with some kind of liquorice in it, but I don't like that at all :(.

tyvärr är det ju inte bara en länk, utan jag måste skriva det också. :) det är ju så enkelt ändå. Men visst, det kan jag göra det vid tillfälle.

This recipe looks great and I'd really like to try it, but I'm not sure how to melt chocolate in a water bath. Do you think you could explain to me how this works?

CKA - I always use the microwave myself, but for a waterbath, place a bowl (porcelain, glass or metal, not plastic) on top of a small saucepan with an inch or so of water in it. The water must not touch the underside of the bowl. Break the chocolate into small pieces, place in the bowl, and heat the water until simmering but don't let it boil. Stir all the time to make sure the chocolate melts evenly. You can absolutely NOT get any steam in the chocolate or it will become grainy.

Looks delicious. I LOVE peppermint bark and it is so expensive to purchase so making it is a great option.
