Romaine Lettuce with Peanut Dressing
I know, this is a not so great photo, but don't let that deter you from making this salad. Because it's special. It really, really is. In that I could eat a truckload of this. And nothing else. It's just so very tasty. If that's not enough, how about this - it takes about two minutes to make. I promise.
This one is also from Pink - definitely one of my favorite books this season.
Romaine Lettuce with Peanut Dressing
Serves 2
1 head of romaine lettuce
1/2 clove of garlic, minced
1/2 tsp freshly squeezed lemon juice
1,5 tbsp brown sugar
1/2 tsp salt
3-4 tbsp peanut butter
2-4 tbsp water
Whisk all the ingredients for the dressing. Rinse the lettuce and tear it into nice chunks. Drizzle with the dressing. And if you're feeling spicy, add some finely chopped fresh chile!

I tried your roasted vegetables with chevre. It's just that I didn't have any chevre, so it was just roasted vegetables with salt, olive oil and a dash of italian herbs. Oh yes, it's really delicious. Thanks for the great recipe.
Anne I find the picture really nice! and the recipe I like so. Gloria
Sounds delicious and dead simple - almost like a satay for salads :)
Anne, my daughter loves peanut butter so I will have to try this dressing for her
My husband and I made this over the weekend. It was soooo good! Thanks for the recipe! I used chunky peanut butter, and it was fabulous. Here's a pretty gross picture (not a photogenic food): http://www.flickr.com/photos/thepyefamily/1950409113/
I just realized I've never commented on this.
WE LOVE THIS SALAD!! We eat this VERY often and NEVER get tired of it. Who would've thought of this combination?!? It's special and it's simple. Doesn't get any better than THAT!
