These are perfect to sprinkle in salads, add to ice cream, mix into cookies or brownies or blondies, nibble on before dinner, devour after dinner... yeah, pretty much anytime.
Super-simple caramelized almonds
200 g almonds (blanched or not)
3 tbsp golden syrup
1,5 tbsp sugar
pinch of salt
Pre-heat your oven to 175°C. In a saucepan, melt the sugar with the syrup and salted. Then add the almonds and give them a good stir. Pour onto a lined baking sheet (I use a silpat sheet) in as close to one layer as you can, and bake for 5-10 minutes. Watch closely, they can go from perfectly done to ruined and burnt quicker than you'd think. You want a fairly light golden brown.
Take out, let cool, then break apart. They keep for several days, and do NOT stick together.
