A great potato salad

The photo doesn't begin to make this justice, I'm afraid. However, it was fantastic. Bright, bold flavors! There are potatoes, obviously - tiny, new ones. There are olives, deeply purple kalamatas. Capers. And some julienned leek.

The dressing is made from homemade pesto (basil, olive oil, Parmesan, garlic, pine nuts), a little white balsamic vinegar, a spoonful of creme fraiche, and the perfect finish: finely grated lemon zest.

Highly recommended!

Oh this looks delicious! I like potato salads with less mayonnaise like this.

I did taste a potato salad from World Chicken and thought it is one of the best ones I've tasted. Might try this one too.
