Salmon with Noodles

The idea for this comes from Nigella Express, yet another winner from my ever-favorite cookbook author. I really do love Nigella's books - her writing is exceptional. I just got the new Christmas book and I'm reading a few pages every time I sit down on the couch. It's really lovely, and gets me SO in the mood for christmas!

Anyway. I changed quite a bit about this - the salmon is pretty true to the way she made it, but the noodles are something else entirely. Feel free to make it your own, just add whatever you like to eat in noodles. I had a craving for broccoli, so that was really my main focus.

Salmon with Noodles
serves 2

2 portions salmon fillet
1 tsp curry powder
1/4 tsp salt
1 tsp sugar
oil, for frying

Noodles - as much as you want, use your favorite kind and cook according to package directions
1 garlic clove
1 bunch of broccoli, divided into florets
2 carrots, thinly sliced
1/2 leek, thinly sliced
fresh ginger, about 4-5 cm
100 g fresh beansprouts
soy sauce
fresh coriander
oil for frying

For the salmon: Mix all the spices and dredge the salmon in this. Fry in a hot pan in a little bit of oil for 2-3 minutes on each side.

Cook the noodles, and rinse in cold water. Heat a little bit of oil in a wok or large frying pan, and fry the broccoli and the carrots for a few minutes. Add garlic, sliced leeks and ginger, and fry for a few more minutes. Then add soy sauce, and some water if you want to have it saucier, stir in the bean sprouts and mix well. Serve with the salmon, and top the whole thing with fresh coriander.

This looks pretty tempting, and such and easy recipe! I love that the salmon is dredged in curry powder, yum. I will have to try this out.

Mmm curried salmon. Don't think I've ever had anything like that but if it's from Nigella then it must be good.

Wow, that was delicious! I loved the curried salmon paired with the asian style noodles. It took no time at all to make, and, my boyfriend who is a chef raved about it! I will definitely make this again!
