Oh, what a difference...
One of my dear readers, Sue from New York, e-mailed me a while ago and asked if she could bring me anything, as she was on her way to Sweden soon. I jumped at the chance to get my hands on some stone-ground cornmeal, and very very generously she gave me three packets - two yellow, and one blue! (Can't wait to try that one!!) I have to say, what a huge difference from the polenta I've been baking with! First of all, this actually smells like corn. Fresh, sweet corn! Delicious! And it's much finer ground.
I baked the same recipe as I had before with it, and it was so incredibly yummy! Not that it wasn't good before, but this was better. It made a much more tender cornbread, fluffier and lighter, and with much more flavor. I loved it!

It is good but here in the sticks not as easy to get , but can usual get in chicago
I don't doubt that it is delicious. But just keep in mind that probably all American corn is GM. Just a heads up.
I'm not saying don't eat it. As someone who lives in the U.S., I eat corn from time to time. But I remain I'm suspicious of the possible longterm effects of GM foods, though I have not strictly kept them out of my diet.
Interesting point Gary! I haven't considered that at all! I tend not to be so worried about GM though - I think I'd prefer that to pesticides, but it's a bit worrying indeed.
Yep - the coarse ground is such a different flavor. We miss it.
As someone who lives in a farming community I must admit coming from England where GM is still a dirty word I do wonder if the big seed companies have railroaded it through and does anybody know the long term consequences.
I think my biggest worry is that farmers can not go back even if needed to allow crops to go to seed to use the following year . the whole GM thing is scary and not discussed in the cooking blogs as much as i would expect
Hi, I do read your blog quite a bit... hahaha! I have a food blog as well. But I don't teach on how to cook though, plainly because since I was back, I haven't had much space in my home to do cooking. More over, Malaysia's a place which is easy to get food everywhere we go.
Anyway, if you do need any recipe I can always try to provide you too! Cause I love cooking too! Cheers!

The GM topic aside, do you have any experience, Anne, with trying to influence what the big stores bring into Sweden? I can send an email, of course, but... ??
Nikki, I haven't asked.. I will ask the smaller stores like Fine Food and Cajsa Warg though.
Mmmmm, cornbread. That looks absolutely delicious. Have never tried making it myself but I do love to eat it...
