Oven Pancake with Apples & Bacon

Pancakes is one of the very favorite family foods in Sweden - and while it's usually thin, Swedish pancakes that's on the menu, sometimes it's much more convenient to make a thick oven-baked pancake. And this is great too! It's usually more savory than the thin kind (which is often served with jam and whipped cream) and I like to put apples and bacon in mine. However, I like to eat it with something sweet - jam, or why not maple syrup? It's delicious!

Oven Pancake with Apples & Bacon
Serves 4

140 g bacon, diced
2 apples
1 red onion
4 eggs
300 ml (1,2 cups) flour
800 ml (3.2 cups) milk
salt

Preheat the oven to 200°C.

Put the diced bacon in a large, rimmed oven pan. Place in the oven for about five minutes.

Meanwhile, peel and slice the apples, and slice the onion thinly. Add the apples and onion to the pan in the and let it brown for a few more minutes.

Whisk together milk and flour, add the eggs and a pinch of salt. Pour this into the pan, and bake for 20-25 minutes until it's nicely browned and cooked through.

Oh, yeah! I've been meaning to make an oven-baked pancake for so long now. Don't think I've had one in 10 years. Reminds me of when I was little. This was a dish Mom used to make when she didn't have a clue about what to feed us. Thanks for reminding me.

Why didn't I think of that? My fraternal grandma used to make what she called "poffert" which was a mix between cake/pancake and was baked in a pot on the stove.
(Yay for sweet and savoury in one dish anytime!)

My grandmother used to make a plain one of these, rip it into pieces, and let us devour it with our hands at the breakfast table with lemon, icing sugar and jam.

What an intresting idea! I've never seen an oven-baked pancake but it looks a lot less tricky than all that flipping aroud with your frying pan! And I *love* the apple-bacon combo, seeing as I've always been a fan of the sweet 'n savoury combinations.

Ooh, your main course and desset at the same time! Sounds very comforting - my husband made lip smacking noises when looking at it over my shoulder, which has to be a good sign.
