Apple Pancakes

Ok, this sounded so smart in theory. Fry thin pancakes - like crepes. When they're done on one side, place thinly sliced apples on it, and flip.

In reality, it didn't work so well. And my apple-loving son apparently didn't approve of cooked apples, and painstakingly picked out the un-appley bits. (Drowned in maple syrup, of course.)

The particular recipe I used was absolutely awful so I definitey won't tell you about it - they were such a pain to flip, and most of them fell apart (as you can clearly see from the photo). I might try the idea again, but with US-style fluffy pancakes - should be more successful, I think.

It's possible to make thin pancakes with apple. Start with the thin slices of apple in the frying pan and then add the pancake mixture. Bake, then (cautiously) flip.

Or, try Dutch Babies. They're a personal favorite of mine and I'm yet to stumble upon a child who can resist!

My mum does thin pancakes with grated apples. First add the grated apple to the pan, pour the batter and then fry as usual.

I'm sure US style fluffy pancakes would work out nice though.

This reminds me that I should do Polish apple yeast pancakes soon! ( http://www.acatinthekitchen.com/?p=273 ). They have a completely different texture though, they are not really pancakes.

Did you know that chocolate chip cookies were a mistake? I really like that mistake, lol! I would probably use diced or grated apples in the pancake mix. Funny, we had pancake for dinner last night. I made banana walnut pancakes and on mine I put jam on them instead of syrup. I want to try pumpkin pancakes next.

You should try apple pancakes that use applesauce in the recipe. They're super fluffy and delicious!

coincidently - i did a recipe for apple pancakes yesterday. Core and slice apples (or pears) 1/8" thick, toss (gently!) with a tablespoon or two of maple syrup and cinnamon. Litely butter your grill, arrange apple slices and cook one minute. Top with your standard fluffy pancake batter, pushing it out to form a 4" round. Cook til bubbled and starting to dry, flip and cook another minute. Serve with more syrup and sour cream. This is Martha Stewart's and whatever your opinion of her, these are great.
