Core and slice apples (or pears) 1/8" thick, toss (gently!) with a tablespoon or two of maple syrup and cinnamon. Litely butter your grill, arrange apple slices and cook one minute. Top with your standard fluffy pancake batter, pushing it out to form a 4" round. Cook til bubbled and starting to dry, flip and cook another minute. Serve with more syrup and sour cream.
