Very classic

We had a very classical Swedish sandwich for lunch today, at Gamla Konditoriet (the old pastry shop) in the beautiful little city Vadstena. Open-faced shrimp sandwich on soft bread, with a little mayo and boiled egg. Delicious!

This looks so good! Can you tell me a more about the bread? Is it a soft roll cut in half or is it a whole flat roll cooked on both sides, like an english muffin?

Sarah, it's really neither. It's made with both rye and wheat flour, rolled out thickly and then cut into circles and baked. We generally call it tea cakes, tekakor, and unfortunately I haven't really found a good at-home version. They dry out rather quickly.

If you do find a good homemade version, I'd love to hear about it. Homemade english muffins dry out pretty quickly too, and I'm always willing to experiment. :)

Oh that looks delicious. Talking about Arlanda and Starbucks... one of the last times I flew from Arlanda I was exhausted and treated myself to what I anticipated to be overpriced, not very good airport food but I didn't want to be exhausted and hungry. I had such a delicious shrimp smörgås and a tub of thick filmjölk. I think I will try to make that for myself, or better yet, for myself and a guest.

I hope to visit Vadstena one day & see the Swedish lace shop there.
BTW I read that if you add a little oil to the bread dough it stops it drying out quite so quickly.
