Earl Grey Vanilla Cookies
This is one of my favorite cookies, and I've written about them before but I haven't posted the recipe. It's definitely about time! I first found it through a Sugar High Friday event, where the theme was tea, and Linda from At Our Table made these. I think they might originally be from Martha Stewart though. The recipe is so easy, and you can even freeze the dough and have it hand for whenever the cookie monster strikes. Or just freeze the finished cookies. They hold up extremely well, and I've given these to many instead of flowers, as hostess gifts. I've even mailed them!
I know it sounds weird to have tea in cookies, but do give them a try. They really are lovely!
Earl Grey Vanilla Cookies
500 ml (2 cups) flour
125 ml (1/2 cup) sugar
125 ml (1/2 cup) powdered sugar
6 Earl Grey teabags
1 tsp vanilla sugar or vanilla extract
1 tsp water
200 g butter, unsalted
Use a food processor, and blitz the tea from all teabags with the sugar, powdered sugar, vanilla sugar if using, and flour. If you're using vanilla extract, add this now, with the butter and water. Let the machine work it into a nice dough. If it's too dry, add another teaspoon of water, if it's too wet, add a little more flour.
Shape into sausages, wrap in plastic, and leave in the fridge or freezer to firm up for at least a couple of hours, or overnight.
Bake at 180°C for about 10 minutes.

Oh, dem har jag minsann provsmakat hemma hos Maria på forumet (?)! :D Satt själv häromdagen och funderade på om man kunde baka en god mjuk kaka med te i. Det är mitt nästa projekt.

Earlier this week, I saw a recipe for Earl Grey Tea Muffins on the Just Bento blog, and now this! Something is compelling the universe to make Earl Grey tea baked goods! :)

Hej! Just wondering: how many cookies does this recipe make? And do you think they would be as good with flavoured tea or fruit infusions, too? (I only have fruit infusions at home, I'm addicted to them)

Fruit infusions, well, possibly! I'm not completely sure though - I really like the actual tea flavor here, as well as the lemon and bergamott from the particular kind of tea. But do give it a go! This will yield about 40 small cookies.
I'm loving the little specks of earl grey in the cookies. Glad to know that I can make a big batch and freeze them!

Do you know approximately how much loose tea the recipe would require? (No EG bags in my neighborhood. Have to order loose by post.)
Chaz - about two tablespoons should do it! :) Especially with loose tea which is generally a bit more intense than the bags.
These are lovely - freshly baked cookies on demand if you freeze the dough! And I *love& the sheep cups :)
Wow...I baked these and they lasted exactly 10 minutes before they were all gone. Definitely a crowd pleaser!!!!
Hi, I've got another couple of questions: ^^
1) When do you have to cut the sausages into cookies? Before or after baking? (My mother cuts cantucci after baking, then bakes them a little more, so here's where i got the doubt from)
2) Might I post this recipe on an Italian forum (translated into Italian)?

Valeria - sure, feel free to translate it! :) And you cut these before baking. (I don't think this recipe would work very well the other way.. but you could always try, I suppose!)
