Crunchy Salad


After all that bread yesterday, how about a really yummy crunchy salad? This one is really super - perfect as a healthy lunch. And it's really good even in the winter, since this is when carrots are at their prime.

Crunchy Salad
Serves 2-3

2 large carrots, coarsely grated
1 small fennel bulb, thinly sliced
1 green apple, diced
1 shallot, finely diced
1 red bellpepper, diced
100 ml (about 0.4 cups) salted, roasted peanuts, rinsed

For the dressing:
100-200 ml thick yogurt
1 tbsp white wine vinegar
2 tsp dijon mustard
2 cloves of garlic
2 tsp sugar
black pepper

Mix all the ingredients for the salad, and then everything for the dressing. Serve with a good bread - like that potato bread everyone wrote about yesterday!

Oh yes - that really is one tasty looking salad. I actually love these kinds of salads and prefer them often to the ones that have lettuce in excess.

Hi Anne. I made this salad two evenings ago (had left-overs last night again!) and it was amazing. I used cucumber as I couldn't find fennel at our local store. I also used roasted, salted cashew nuts instead of peanuts. My fiance is already asking me when I plan to make it again...so thanks for a winning (and healthy) recipe!

OK, a question from the 'beginner' here... what's the purpose of rinsing the peanuts? I assume to get the salt off...?
