Banana Bread
Funny - I made this quite a while ago, but then forgot to post about it. Kevin just posted about a banana bread and reminded me that hey, I should too. This is a no frills banana bread - very tasty though. My aunt's dog Stumpan - remember her? - used to love it.
Anyway. Great bread, lousy picture. It keeps well in a jar for a few days, as it's very moist.
Banana Bread
from Thane Prince
3-4 mashed bananas
3 beaten eggs
1 tsp vanilla extract
200 ml vegetable oil
140 g wholemeal flour
140 g plain flour
2 level tsp baking powder
1/2 tsp salt
100 g light muscovado sugar
50 g chopped shelled pecans or walnuts
Preheat the oven to 160°C and lightly oil a loaf tin. Mix the bananas with eggs, vanilla extract and oil.
In another bowl, mix the flours with baking powder, salt and muscovado. Fold into the banana mixture, and add the nuts.
Pour into the prepared loaf tin and bake for 50-60 minutes. Allow to cool for at least 30 minutes before removing it from the tin.

Hi Anne, I baked "your Phoebe cookies" the other day and they were very popular at F's office. Even F himself eats them all the time, even though he normally doesn't like raisins! Thanks for posting the recipe!
Oh, happy to hear it Dagmar! :) I feel much the same - not a big raisin fan but these cookies.. well, there are exceptions to every rule :)
Banana bread is my great favorite since my teenage years. Thanks for reminding me what I should do with musty bananas lying around in my kitchen.
My brother thought raisins where flies when he was little and he still picks them out from cakes etc ( He´s 41 years ) My cat on the other hand eats raisins from Panettone, and he climbs over you to reach them

Oh my god, I just made your Banana Bread, and it was SO easy and it looks and smells fantastic! Thanx for sharing the reciept, Anne! I can't wait to tast it ...it just has to cool down a bit.
Oh so sad... First of all; My banana bread looked sooo yummy when I took it out of the oven. But then it fell together. And secondly; Apperantly my family doesn't like banana bread. And not me either, when it tastes like it dit yesterday. What have I done wrong?
Astrid, I'm so sorry! I was so happy to see the first comment and then.. not. I never had any problem with my bread falling. :( Maybe something with the baking powder..?
Yeah, I was sorry too - I was so happy to finally find some good use for my left-over bananas... But anyway, maybe I try again, who knows? :)
