The perfect lunch: Risoni & Halloumi



If I'm home at lunch time, I'm rarely very organized. I like to get something to eat preferrably fast, and I rarely feel very inspired to cook. Sometimes though, good ideas hit me. And this was one of those days.

Risoni & Halloumi
Serves one hungry girl

100 g risoni pasta
100 g halloumi cheese, cubed
olive oil
handful of rocket (aragula), roughly chopped
1/2 red onion, thinly sliced
1/2 avocado, diced
2 tbsp pesto
4-5 cherry tomatoes, halved

Boil the risoni until tender. Fry the halloumi in a splash of olive oil until golden brown. And then mix it all together - stir the risoni with the pesto, add in rocket, onion, avocado, tomatoes and halloumi. Season if you want to. Enjoy.

I love squeaky cheese! Have you ever grilled halloumi? It is fantastic.

Now you've got me craving halloumi for dinner!

I think it sounds fabulous. I haven't heard of this type of pasta, but it looks like what is called orzo in the U.S? Anyway, I love the combination.

Anne - I was going to ask the same question as Kalyn... Would this be considered Orzo pasta?

Yes, risoni is the same as Orzo which might be a brand name. Looks good, Anna, & a good way to use up a few leftovers.

Jennifer, halloumi is just the best, ever :) I love it grilled too - it's so tasty!

Kalyn & Joe - not having seen orzo, I'm not completely sure, but Pene says it's the same so.. go ahead and try :) It's just basically small, rice-shaped pasta. If that's what orzo is - yep, then it's the same :)

Cool, looked like orzo to me too and it looks great for summer time. I now have halloumi in my kitchen thanks to one of your past posts! Keep up those great ideas.
