ooooh... I adore roasted asparagus! Oddly enough, roasted asparagus is a really good sushi filling!
I thought I would share my two favorite ways to roast asparagus: either with a drizzle of balsamic vinegar OR laying springs of fresh rosemary on top of it. You really can taste the rosemary on the asparagus after it's roasted!
Anne,Mayonnaise is my favorite asparagus topping. I make it with roasted garlic (a sort of aoli) or fruit flavored vinegar with a touch of fruit puree in it (raspberry is good) or even spices such as smoked paprika or curry.
Shannon - that sounds awesome! And Kevin - any chance of a fool-proof mayo recipe? I've never tried making my own. *hangs head in shame*
