Oven-dried tomatoes



This is the perfect way to use up a bunch of over-ripe tomatoes. Strangely, I always seem to have that at hand...

Oven-dried tomatoes

very ripe plum tomatoes
smoked salt
cayenne pepper
sugar
olive oil
white balsamic vinegar

It’s no use giving proper measurements. But – preheat your oven to 150°C. Cut your tomatoes into wedges, and place in an oven-proof dish, skin side down. Drizzle with olive oil. Sprinkle with smoked salt (so delicious!), cayenne pepper and regular sugar. Bake, uncovered, for about an hour. The tomatoes should start to look a bit dry. Remove, drizzle with white balsamic vinegar, and transfer to a bowl. Eat as a condiment to almost anything – great with meat, goes well with fish, nice in a salad... the possibilities are endless, really.

I love to make oven-dried tomatoes. I normally put mine in a 225 F oven for an hour, and then let them sit overnight in the closed oven. They come out perfectly dried. I then normally put mine in a jar and cover with olive oil in the refrigerator to keep them.

Fiber, thanks for the tip. I didn't even think about keeping them.. more as a small side dish. :)

Kalyn, it really works with a little burst of heat! I loved it!

I wonder, if keeping them (or trying at least...), how long would they last in refrigerator - days or more?

tiv - as these are still quite moist, I'd say a couple of days. Maybe a week. Way longer if you cover them with oil, as fiber suggests, but that would make them.. well, oily. I'm pretty sure they're best straight from the oven though :)

Anne, I am really excited to see this recipe! I love tomatoes, and it never occurred to me to make homemade oven-dried tomatoes, which are probably so much better than what I buy at the market. Thank you!

Hi Anne, good recipe as always. I love oven-dried tomatoes and use them almost in any dish. Very tasty in salads with rocket and walnuts and as a pizza topping too. I add a clove of garlic to the jar when I marinate them in olive oil and it gives a nice kick.
