Maple-honey granola

I think I mentioned a few months ago that I placed an order with the Ottolenghi webshop, in the UK? Well, I did. And I ordered their granola. And I loved it. I usually don't like granola all that much, it's either not crunchy enough, or filled with somewhat icky stuff, or with lots of fruit in it, or.. just something. I end up eating it a few times, throwing out the rest. Not so with the Ottolenghi stuff. It was divine. However, it had brazil nuts which I don't particularly cared for... and it was pretty expensive. Especially to ship over from the UK. Not an option in the long run, obviously.

So I made my own - I drew some inspiration from the ottolenghi cookbook, and some from online sources, but finally ended up with this. It's not the healthiest of granolas, I know. It is, however, one that I will finish. And that's pretty good.

Maple-honey granola
300 g oats
200 g mixed nuts (almond, cashew, hazelnuts)
25 g sunflower seeds

75 g honey
75 g maple syrup 
4 tbsp rapeseed oil
2 tbsp water
Pinch of salt

Place the oats, nuts and seeds in a big bowl. Combine honey, maple syrup, oil, water and salt and then mix this into the rest of the ingredients. Use your hands to make sure everything is well covered. Spread on a lined baking sheet, and bake at 140°C for about 35-40 minutes. Check it every ten minutes or so, you might need to stir it a little, and while you do want it to turn golden, you don't want it to burn even a little.

Gingerbread White Chocolate Cookies

These cookies are very similar to those found at Espresso House shops all through Sweden in December. A chewy cookie, slightly spicy, with chunks of white chocolate and almonds.

Gingerbread White Chocolate Cookies

170 g butter, melted
100 g sugar
200 g brown sugar
1 egg
1 egg yolk
300 g flour
1/2 tbsp salt
1/2 tbsp baking soda
1 tbsp gingerbread spice (cinnamon, cardamom, cloves)
125 g white chocolate chips
125 g almonds, blanched and slivered

Mix the butter with the two sugars until combined. Add the egg and egg yolk and mix again. Stir in flour, salt, spices and baking soda, and mix until it's just combined. Finally add the chocolate and almonds, and mix again.

Place large scoops on a baking sheet and bake at 160°C for 12-14 minutes. (I use a convection oven, if yours is not, you might want a slightly higher temperature.) Let the cookies set before attempting to move them. (For smaller cookies, you don't need more than 10 minutes.)

And as always, I heartily recommend freezing the scooped-out cookie dough, and then baking from frozen. You might need an extra minute or two in the oven.

Flourless Almond Brownies

If you make the macarons I posted about yesterday, you'll find yourself with some leftover almond praline. Not a huge problem, obviously, but I did - and these brownies are what I made with it. You can totally leave it out if you don't happen to have it, but it adds an extra touch of caramel which I found very welcome. (Just use more ground almonds.)

These are great on their own, but absolutely divine with a dollop of whipped cream. And as a bonus, they're gluten free!

Flourless Almond Brownies

225 g butter
225 g dark chocolate
200 g sugar
1/2 tbsp vanilla extract
3 eggs
150 g ground almonds
50 g almond praline

Melt butter and chocolate, and add sugar and vanilla. Let it cool slightly, then add the egg, almonds and almond praline. Stir until smooth.

Pour in a buttered cake tin and bake at 175°C for 25-30 minutes. Remove from the oven, and cool before taking them out of the pan.

Om Nom Bombs

Just because I'm on vacation doesn't mean you won't have any blog posts! Good thing I have a bit of backlog. I made these balls a while ago - they're a version on rice crispie treats, and I found the original recipe here. Mine didn't come out very sweet at all but that will depend on your peanut butter. If you want them sweeter, add more honey.

Om Nom Bombs
makes 30

100 g almonds, toasted and coarsely chopped
75 g rice crispies
20 g freeze-dried cherries
30 g pistachios, unsalted, whole
4 tbsp crushed linseed
3-4 tbsp honey
250 g peanut butter
coconut flakes

Mix everything, except the coconut, into a smooth dough. Shape into balls, about the size of golf balls, and roll in the coconut. Keep cool - I have mine in the freezer.
