Lemon & Parmesan Sweet Potato Gratin

Ok, you have to try this. If you already love sweet potatoes, this is a different riff on them that you might not have tried before. And if you don't love them? You will. At least it converted my husband, who's most definitely not a fan.

I came up with the idea while sleeping - really, I woke up and it popped into my head. Ok, I was thinking about ideas to serve sweet potato, since I wanted to do a small Thanksgiving meal (chicken, no turkey!) and I knew I wanted to include it. And it's rather genious, if I may say so myself! The sweetness is perfect with the zesty lemon, salty parmesan and kicky garlic, and a little cream to coax all the flavors together... trust me, it's good.

Lemon & Parmesan Sweet Potato Gratin

500 g sweet potatoes
zest from 1 lemon
50 g parmesan, finely grated
2 garlic cloves, minced
200 ml cream (full-fat, is what I used.)
salt, pepper

Peel and dice the sweet potatoes, mine were about 2 cm. Place in an oven-proof dish. Toss with the lemon, parmesan and garlic, and season with a little salt and pepper. Pour the cream over it, and bake at 175°C for 25-30 minutes. The potatoes should be soft.
