Chicken Pad Thai
Bad photo, great food. I always, ALWAYS, get pad thai with chicken when we're eating thai, but since it's occurred to me that I can make it at home, we rarely buy it any more. I've tried shop-bought pad thai sauce, which is fine, and I've made my own which is also ok, but I want to try another few recipes to find a real winner before posting about it. (If you have any tips, please let me know!)
Anyway - it's awesome. I love stick rice noodles, they're really chewy and have great texture. Obviously, you can add pretty much anything to this dish, but I like red peppers and snow peas (mangetout).
What's your favorite thai food? Maybe I should order something else next time!
Chicken Pad Thai

Serves 2
chicken - 3 thigh fillets or one breast
2 garlic cloves
vegetables - for example, a bit of zucchini, red or yellow pepper, snow peas, mushrooms...
200 g stick rice noodles
2 eggs
pad thai-sauce (homemade or shop-bought)
soy sauce
ancho chili powder
peanut oil
to serve:
peanuts
fresh coriander
sriracha hot sauce
Cut the chicken into bite-sized pieces. Finely mince the garlic. Cut all the veggies in thin sticks or slices. Soak the rice noodles in hot water until soft - the time will depend on how thick they are. Beat the eggs in a bowl.
Heat some peanut oil in a wok or large frying pan. Fry the chicken and garlic for a few minutes. Add the veggies and stir-fry for a few more minutes. Move everything in the pan to the side to get some room for the eggs, then add them. Stir them a little, so you end up with a scrambled omelet. When the eggs are set, add pad thai-sauce, noodles, soy sauce and some chili powder. Stir everything and season with more spices if you'd like.
Serve straight away, with fresh coriander, chopped peanuts and some hot sriracha sauce. A wedge of lime is also nice!

I have lots of Thai favorites: Phad Kee Mao (Drunken Noodles) with Tofu, Phad Thai Jae (Vegetarian Phad Thai), Phad Pak (Stir-Fried Mixed Vegetables). A new favorite that is irresistable is Panang Curry served with a bowl of steaming hot sticky white rice. I pour the soupy Panang Curry directly over the bowl of rice and savor all the sweet and spicy goodness. I cannot wait for your final Pad Thai recipe since I wouold love to learn to make it myself.
Just this week, the New York Times' "The Minimalist" column in their Dining and Wine section featured a recipe for Pad Thai, it sounds delicious.

I actually added cabbage to this tonight - not bad at all! Mushrooms were.. well, not great, I doubt I'll repeat that. :)
DeadBug, thank you! I'll check it out. It's a good idea to make a big batch and keep in the freezer, for true fast food any time.
Have you tried the Pad Thai recipe from Chez Pim yet? Try to stick with palm sugar over any alternatives and the recipe calls for a little more fish sauce than my liking but it uses few ingredients and it's tasty!
I love Chicken or/+ Tofu Pad Thai and Satay, plus some other Thai dishes! Yum--even thinking about Thai food makes me crave some:)

Anne, I LOVE Pad Thai, but I can't seem to find the stick noodles in Sweden. Could you give me a hint as where to find them? That would be great!
I'd love to try out out your recepe, it would be awesome to be able to make my favorite Thai food at home, instead of always wanting it and waiting til we go out to eat...=)
Karoleen - I get them at one of the Asian supermarkets. There are several in Stockholm - not so sure about other cities...
Jag brukar beställa någon kycklinggryta med kokosmjölk (helst den starkaste), eller wokad kyckling med ingefära (lots of it!). Men älskar även att laga det själv hemma, och att botanisera i asiatiska mataffärer :)
Love Pad Thai! Will be trying your recipe tonight. One of my favorite Thai dishes is Pad See Ew. It's so delicious!
