Chicken Salad for dinner
Apparently, I blog so much about "desperate dinners" that I was approached by a company whose idea is to provide groceries for one week of dinners. Well, I still enjoy choosing what I eat, and eating well - I just don't have time for elaborate recipes, or blogging about them, at the moment. But hopefully I can still provide some inspiration! Tonight's dinner was really good. We bought half a rotisserie chicken, shredded it and tossed it with baby spinach, a red pepper, an avocado, and a mustard balsamic vinaigrette. What made it special was homemade sourdough croutons - I'll tell you about the sourdough bread as soon as I can, because it's really good. Croutons are super easy - just cut up some bread, toss with olive oil and salt and toast in the oven at 200°C for about ten minutes.

You're certainly cooking more than I did after having a baby. I was so out-of-it I could barely manage a shower once a week, let alone cooking dinner.
There's no shame in a quick, easy dinner, particularly ones that look as good as what you've been making.

i love your quick and simple meals. we are all busy and sometimes all you want is a delicious, easy dinner so you can relax with your family. this salad is wonderful, we had a variation ofit last week with left over rotisserie chicken.

This salad looks delicious and perfect for the spring and summer seasons. I've also recently come across another website that might be a good idea for spring/summer meals. Lobster may not be considered Scandinavian, but it certainly is delicious. In the US, it's possible to order lobsters online from a very reputable website called Lobsters-Online.Com. They deliver live lobsters to your door the day after you order them. They have some great reciples on their site, as well as a lot of information about lobsters. I've been so impressed with your site that I would love to see some lobster recipes from you Anne.

Eliza - I normally don't respond to this kind of hidden advertising, I just remove it, but this time I thought I'd make an exception. Lobster is super expensive in Sweden, and since it's generally shipped half across the globe, it's not very environmentally friendly for us to eat. So, sorry, there won't be any lobster recipes from me - it's just not something I'm comfortable cooking with.
