Roasted Beets & Red Onions
Obligatory kitten news: we still have two girls, they seem fairly strong and they eat well when we feed them. So, I'm pretty hopeful, but as they're still so incredibly tiny, there's no knowing for sure if they'll pull through yet.
Now, for some food. This is a simple side dish that's incredible with some smokey grilled meat. Serve it with a cheese of some sort - goat's cheese or feta crumbled on top, or mashed with yogurt for a simple sauce, or this parmesan sauce. It'll be really lovely.
Roasted Beets & Red Onions
Serves 4 as a side dish
8 beets
4 red onions
3-4 tbsp olive oil
1 lemon - the juice and the zest
salt, pepper
Boil the beets without peeling them, for 20-25 minutes. They should still retain some bite, and not be mushy-soft. Peel and cut into wedges. Peel the onion and cut that into wedges as well. Place in an oven proof dish, drizzle generously with olive oil and lemon juice, and stir in the lemon zest, salt and pepper. Bake at 200°C for about 30 minutes.

Good news about the other kittens - hold on, girls!
Oh, and the beets look great. My DH is not too keen on roasted beets (well, I only made them once so far), but I am and am determined to try and convince him.
I love roasted beets with onion, I add also carrots, then pour over maple balsamic vinegar dressing with thyme... :) I feel like to make it for dinner now!

I love roasted beetroot - especially with some goats cheese or feta and some toasted walnuts.

Thank you for good idea Anne! I just was thinking, what to cook for supper today :) But I will steam a beets, I always steaming them instead of boiling.

I tried this for dinner tonight (along with a favorite chicken dish) and it was real good!
As I was preparing it, I didn't think it looked like it would be that great. And as I served it, I didn't think it looked like it would be that great.
But after a couple of bites, well, it grew on me! It's quite delicious and we'll have it again for SURE! Thanks!!
