Chicken Salad with Parmesan
I have a pretty fun day ahead of me - I'm going to lunch at SeaLounge, which is a conference boat, with one of Sweden's biggest wine & liqour importers. We're going to have a Auschentoshan whisky tasting on board, led by their master blender - I'll tell you all about it later.
I don't know about you, but for me, summer is all about trying to find food that's really easy to make and preferrably also nice and cool to eat, while still feeling food-ish rather than just snack-ish. This salad really hits the spot for me - I hope you'll like it too!
Chicken Salad with Parmesan
Serves 2
1 chicken breast, cooked
6 cherry tomatoes
some fresh basil
1/2 red onion, finely diced
10 cm cucumber, diced
50 g snow peas, cut into smaller pieces
1 head of romaine lettuce, torn into bite-sized pieces
3-4 tbsp parmesan, grated
1-2 tbsp olive oil
2-3 tbsp balsamic vinegar
2 garlic cloves, minced
salt, black pepper
Whisk olive oil, balsamic vinegar, garlic, salt and pepper. Cut the chicken into smaller pieces, halve the tomatoes and.. mix everything together. That's it!

Hej Anne har inte varit här på ett tag har inte mått så bra har jobbat lite för mycket. Ser att du ligger i som vanligt en fin Operatårta och härliga saffrans tryfflar. Hoppas du får en bra vecka mvh Daniel

I agree - Summer can be quite a trial, finding something filling but not too hot and heavy. This looks ideal :)
