My favorite Guacamole

I know, I've told you about this before, but being summer and all, I think it doesn't hurt to repeat. It's such a great recipe. And such a great dish. I can easily eat guacamole with almost anything - and any time. My favorite though, is probably just as a dip with nice, salty corn chips.

Anne's Guacamole

2-3 ripe avocados
handful of cherry tomatoes, halved or quartered
juice of 1 lime or half a lemon
1 large bunch coriander, chopped
2 cloves of garlic, minced
salt and freshly ground black pepper

Mash the avocados. I use a nifty handheld immersion blender. Add the garlic. Mash some more. Add the lime, the salt and the pepper. Add the tomatoes, and decide if you like the texture or if you'd like to thin it out a little bit with some creme fraiche. Finish with the coriander, and that's all there is to it. Enjoy on corn chips.

I adore guacamole. This is a good recipe, I imagine your cilantro is enormous with your extra summer sunlight in Sweden!

I'm lazy and just mix salsa with the avocado. This can get fancy as there are so many cool, gourmet salsas available. We have raspberry/lime, chipotle/corn, and others.

What is your selection of salsas like in Sweden? I'm in the US

I'll tell you my favourite:
My first reaction: how could you forget the jalapenos? I use a whole lot of them! (I like it hot, as you understand right now, but most important is the fresh n sweeet taste of those peppers) Also I use some "purple" onion and instead of fresh koriander I use the powdered, just a little.
Please tell me what you think of this! (anyway; try it!)

I'll make an avocado salad, when company's already sitting around the table. It's just a unobstructed guacamole, diced on a plate, with a squeeze of lemon or lime, plus a healthy dusting of cumin.

Guacamole always includes cumin and perhaps coriander, in addition to lime, cilantro, perhaps there will be diced purple onions, tomatoes.

Sometimes I just slice the avocado open, salt it, squeeze of citrus, dust of cumin, and eat it out of the skin with a spoon. Or on fresh Italian bread! or Bruscetta!

Your recipe is just how I'd make it, except I always put a tiny bit of ground chile powder.

tjena! jag är mexikansk och min familj ha en bra tex-mex restaurang...jag ska berätta för dig en hemlighet.
for salsa try this:
place 4 tomatoes, 2-4 jalapenos or slightly more serrano peppers depending on spiciness you like, one slice bacon, and 1-2 cloves of garlic in skin in a baking pan and drizzle with olive oil and place under a broiler until vegetables and tomatoes appear blackened on top (sometimes bacon and garlic are done before that time). Remove skin of tomatoes and peppers if possible . Add salt (1-2tsp) and pepper and handful of cilantro. Toss in blender. Serve with whatever you like, especially chips and margaritas.

To make guacamole add 2-3 tbsp of salsa to one avocado and juice from half a lime along with salt and pepper to taste.

For a green avocado dip, use the same salsa recipe as above but use 6-8 tomatillos instead of tomatoes to make salsa. Add the salsa to the avocado as described above and also add 1-2 tbsp of sour creme/creme fraiche. This sauce is yummy by itself or on nachos or enchiladas.

I do this at home at am very fast at making the salsas while i'm doing other stuff. Takes less than five minutes to prep and blend. i can share others if you like these.

Looks delicious.

I like to add a jalapeno and half of a red onion, no garlic. I think the onion adds some nice bite. Also, there's no such thing as too much cilantro!

Your recipe matches mine almost exactly. When cherry tomatoes are not in season I substitute my favorite chunky salsa as we get good prices on avocados in the middle of the winter from a second California harvest.

i have a good one...i grew up in southern california and learned it there,and it always gets raves:

two ripe avocados
one medium tomato
one jalepeno pepper
one small yellow or white onion
small bunch of cilantro/coriander
pinch of salt and pepper
squeeze of fresh lemon and lime juice

cut up all veggies and mash together with a potato masher (briefly if you like chunky, longer if you like smooth). add salt/pepper and lemon/lime.

Very nice recipe! I like to add a tablespoon of cognac, and I use Key Lime juice instead of lemon juice. You can also use Meyer Lemons if you want it to be even sweeter. But an ingredient that really rocked a client two weeks ago was minced lobster. Just one small lobster, boiled and drained, then minced. I made chips from pita bread that I cut to chip size, put a drop of olive oil on and lightly salted. I baked them at 350Degrees F for about 10 minutes. 2 avocados
juice from 1/2 lime
1/4 cup finely chopped white onion
1/2 tsp salt
2-3 finely chopped jalapenos (ribs and seeds removed)
1 tomato chopped and deseeded
mash everything together with fork except for tomato. Add tomato at the end and let flavors meld together for about an hour in the fridge.
A super simple recipe and I got rave reviews!

Living in California, I've eaten a lot of guac. But a few years ago we visited a friend's family, and his sister mixed up a superb guacamole with just avocados, lots of chopped garlic, and salt. For best results, the avocados should be perfectly ripe and flavorful. It's amazing!

We have a family salsa recipe and we add that to avocado to make the guacamole...it tastes better than adding canned salsa...eventually I'll have to add that to my blog...yours looks great too, guacamole is always good!

YUM!! I love homemade guacamole! I basically use the same as you, the cilantro and lime juice, but I add a packet of the extra spicy seasoning made by Concord Foods. (www.concordfoods.com) --Only this brand! It is better than any I've tried!
I've never added tomatoes though. But since I have a bunch of grape tomatoes in my garden right now, I think I'll try it this weekend!

Wow! Thanks everyone - looks like I have quite a bit to try out this summer!! :) The cognac tip is especially exciting - that's really different!

Herdingcats - sadly, we don't have a huge array of salsas to choose from here. It's pretty much "medium" or "hot". :) Raspberry/lime sounds incredible though!

But what I like to do is add a little red onion or something to it, just to add a little more flavor.

I add cilantro and roasted jalapenos to mine and use my immersion blender's chopper attachment to roughly chop everything together. (don't forget the sea salt and a touch of olive oil)

Got my blender from a restaurant equipment store. It's AWESOME!
