Linnéa's Berry Pie



Let's start this week with something sweet!

Linnéa is my niece, and she served this super-great berry pie when I visited her and her family this summer. It was absolutely delicious! You can use any berries you want - and frozen are fine, just let them thaw a little bit. This one was made with -I think - raspberries and blueberries.

Linnéa's Berry Pie

100 g butter or margarine
250 ml (1 cup) of sugar
1/2 tsp salt
250 ml (1 cup) of flour
1 tsp baking powder
1 egg
2 tbsp golden syrup (substitute light molasses)
2 tsp vanilla sugar
200 g berries

Put the berries in an oven-proof dish. Melt the fat and add the sugar. Mix flour with baking powder, salt and vanilla sugar, and stir into the batter. Finally add the egg and the syrup. Cover the berries with the batter.

Bake at 175°C for 30-45 minutes until the surface is golden brown and looks caramelized. Serve with ice cream.

I pour in the batter first and after that the berries. They sink quite a bit inside and it is delicious! Especially when sprinkled with crystal sugar before the baking.
