Need a quick idea for dinner? This was a very delicious mushroom bacon risotto we made a while ago. It's a basic risotto, with some fried mushrooms and fried bacon stirred in at the end - couldn't be easier.

I made this dish tonight, turned out really tasty. I love to add some balsamic vinegar on top of my risotto when serving, it gives a nice "sting" to it. And making risotto is of course a good excuse for having a glass of wine or two for a regular Tuesday night dinner (unless you're pregnant of course!).
