Hazelnut Cocoa Cuts

A very yummy version of the humble chocolate cut cookie, which is normally sprinkled with pearl sugar. I don't have a photo of the finished cookie, which should serve to tell you that it's delicous. (Actually, I have some stashed in the freezer. They thaw in seconds, making them perfect to have with a cup of afternoon coffee.)

Hazelnut Cocoa Cuts

about 40 cookies

200 g butter, at room temperature
240 g sugar
2 tbsp golden syrup
3 tbsp cocoa powder
1/2 vanilla bean
2 tsp baking powder
135 g all-purpose flour
135 g wholewheat flour

To decorate:
one egg, beaten
toasted hazelnuts, crushed

Mix all ingredients for the dough, into a smooth and supple dough. Shape into logs - mine were about 4 cm wide - and place on a lined baking sheet. Flatten slightly, then brush with egg wash and sprinkle with crushed hazelnuts.

Bake at 200°C for 10-12 minutes. Wait a minute or two, then cut diagonally into cookies. Let them cool completely on the baking sheets before transferring to a plate or, in my case, to the freezer.

  1. Ja, nä det var väl inte så himla bra idé att gå in här precis vid lunchdags. Matlådan med quinoa, zucchini, paprika och citron blev plötsligt så fruktansvärt ointressant ;-)

    Golden syrup - är det vanlig ljus eller ett särskilt märke kanske? Låter extra god i alla fall.

  3. Hej... ville veta om med "wholewheat flour" menar du vanligt vitt vetemjöl eller alltså fullkorns vetemjöl...? För jag bor i USA, och det är ju två olika saker om man säjer "wheat flour" eller "whole wheat flour." Låter annars smarrigt, och jag är sugen på snitt-kakor!

  4. Hej! Med wholewheat menar jag fullkornsmjöl, eller grahamsmjöl som det oftast kallas här :) Man kan självklart använda vanligt vetemjöl också, grahamsmjölet ger en lite smuligare kaka. Gott blir det oavsett!

    congratulations on your blog birthday.
    I found your blog when I lived in Canada,
    now we are here in Sweden and is great to have a place to check for recipes with swedish ingredients.
    I too love full of everything cookies, but these turned out great, lots of chocolate flavour.
