They are the best I have tried besides my mom's (which are hidden in her old cookbooks back home in Denmark).

One note on the buns baking time:

I live in the Canadian Arctic and the dryness affects the rising and baking times. I baked them for 10 minutes and it was not enough; the buns turned out doughy in the centre. Luckily I discovered this pretty much as soon as I took them out of the oven as I could not control myself and had one nearly immediately. I put them back in for another 3-4 minutes and it worked great.

Thanks again!!

SoesAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-8814165.post-80524524878582763542008-12-11T19:33:00.000+01:002008-12-11T19:33:00.000+01:00Love your blog. Try putting the sticky dough in plastic wrap and then a plastic bag so it doesn't dry out and then into the refrigerator for 2 hours or overnight. It makes it easy to make the buns. And that sounds delicious :)

Hannah - great tip, thank you!

Jeanne - oh, I think it's a fairly Swedish tradition, so don't feel bad for not knowing about it :) It *is* very strange to foreigners in Sweden too, but it's very cherished here :)

ptasia - it's basically the same dough as used for other sweet, yeasted buns, but with more fat added to counter the dryness.

Ejm - you can make them in advance if you freeze them as soon as they are cooled off, and then thaw on the day you want to serve them. :) I've never tried anything sweet with sourdough really! Because of the short rising time, I think you probably need a lot of rising power, and I wouldn't try it with all sourdough, but I'm sure you can use at least some.. interesting, do let me know how it goes! :)

Christina, thank you :)

Chris, thanks!!
