I'm also a scaredy cat when it comes to some foods and I've been trying to get over it - a little bit at a time. Your dish is beautiful - I don't think I'd heard of this type of bean before, but there are sooo many it's not surprising! I'm not a mushroom fan - but I love risotto and would love to try this sans mushrooms!
